We continue our summer seafood theme this week with Heather:

Nothing better then lazy summer weekends on the water. Whether it be the ocean, a lake, or a peaceful river, there is something so relaxing about time spent near water. If you are lucky enough to catch some fish, even better!

My favorite water-side meal is a good ole fashion seafood boil. They are super easy, can feed 2 or 20 and always taste good. The following is a shrimp, potato and corn on the cob boil. Or really a steam. We like to put a rack in the bottom of our pot to keep the food off the bottom of the pot and out of the liquid (beer in this instance.) You get great flavor and none of the water-loggedness that can sometimes happen with full boils.

Shrimp Boil (serves 3-4)

Your family & friends will be SO impressed when you serve this Shrimp Boil Meal!

Ingredients

  • 2 beers, preferably a summer lager
  • 1.5 pounds of shrimp (shelled and cleaned)
  • 3 ears of corn
  • 1 pound of tiny potatoes
  • “Old Bay” seasoning

In the bottom of a heavy bottom pot with a raised rack, pour two beers. Place the corn and potatoes in the pot, sprinkle Old Bay over them (to taste) and cover tightly. Bring beer to a boil and let boil for 10 minutes.

Test the done-ness of the potatoes. A knife inserted into the potato should slide out easily when lifted.

Add the shrimp (or clams, mussels, crab, etc.) and cover. Let steam till done – 5 to 10 minutes.

Pour off the beer and then dump out the goodness. Serve with lemon wedges, butter and cocktail sauce.

Protip – An easy cocktail sauce is 1/2 cup ketchup, 2 tablespoons of horseradish and 1 tablespoon of chili sauce. Stir well and let sit for 20 minutes.
